Gluten Free Spritz Cookies- Valentine’s Day Edition

This post was originally posted in February of 2015 and was my first post on this blog as my old moniker "Gluten Free Avenger".  In celebration of my blog turning 2 and because this is just a kick-ass recipe, I thought I would share it again.  I love to make spritz cookies for many holidays because you can make them into fun, holiday appropriate shapes and it happens to be my husband's all time favorite cookie.  These cookies will disappear quickly with guests, so I usually make 2 batches (at the very least).  I remember when I brought a huge bucket of about 100+ of these cookies to my sister-in-law's house for a holiday party and my step daughter and her friend snuck off with all the cookies.  By the time we finally found them, there were only about 10 cookies left.  They're have been warned. In case you missed my very first recipe and blog post in February of this year Gluten Free Spritz Cookies, I'm here to share it for you again for Christmas.  Baking cookies for Christmas is one of my favorite things to do, it calms me down and I love to give them away as gifts to friends and family.  Well I've been at it again, like I have been every year since my early teens and here are the results.  I hope you have a very Merry Christmas/ Holiday Season!! Gluten Free Spritz Cookies- Christmas Edition 1½ cups butter1 cup sugar1 teaspoon double-acting baking powder1 egg1 teaspoon gluten-free vanilla extract1/2 teaspoon almond extractteaspoon grated orange peel3½ cups Gluten Free All Purpose Baking Flour¾ teaspoon xanthan gum¼ teaspoon saltDecorative sugar Preheat oven to 375 degrees.Beat butter and sugar in an electric mixer set on medium for about 30 seconds. Gluten Free Almond Blueberry Pancakes

Everyone that knows me knows that I LOVE breakfast.  I always have.  I like to start my day off right by eating something healthy and yummy.   These are my favorite gluten free pancakes.  I think it's because they have my two weaknesses....almonds and blueberries.  They're light, fluffy, and oh so full of flavor!  I hope you like them too!
